How to Brie-t the Quarantine Blues: Mini Brie en Croute

I took a break from social distancing yesterday to run to Tops to grab some ingredients for a brie en croute, a delicious French appetizer of sorts that envelops soft brie in puff pastry, then bakes in an oven until it’s nice and flaky and gooey-cheesy.

I was excited, to say the least.

Tops was pretty well stocked, but I couldn’t find a whole wheel of brie anywhere, so I settled for some mini wedges and figured that a bite-size, single-serving type of recipe was more appropriate for these times of social distancing.

Alright, now let’s get into this business.

Here’s what you’ll need for your mini brie en croutes.

  • Puff pastry
  • Mini brie wedges
  • One egg

Aaaand that’s it! This snack is as tasty as it is simple. You can add other little tidbits if you’d like, though. I made a few of mine with either a little drop of honey, apricot jam or chopped dried dates.

If you thought the ingredients list was a breeze, wait till you see how easy it is to actually prepare this lil treat.

Step one: Unwrap your puff pastry and leave it to thaw to room temperature, about 40-45 minutes. As it gets nearer to the 40 minute mark, pre-heat your oven to 400°F.

Step two: After your puff pastry is nice and thawed, sprinkle a little flour on a clean surface and roll it out a little, just so it isn’t as thick. You don’t need to be super precise here.

Step three: Use a sharp knife to slice the puff pastry into nine squares, and wrap your brie wedges, making sure to tuck all the corners into one another and leave no gaps. This is where you can add any extra flavors before wrapping the brie up! Tip: Keep a small bowl of water nearby and use a little drop on your finger as a “glue” to help the pastry stick together.

Step four: Lay the wrapped wedges out onto a baking pan. Beat your egg and brush the egg wash on each wedge until it’s just completely covered but not puddling at the bottom.

Step five: Pop ’em into your oven and bake until your minis are a rich golden brown. Baking times can vary based on your oven, in mine it only took around 20 minutes but you probably shouldn’t keep them in for longer than 30.

Step six: Once your minis are baked to perfection, let them cool a few minutes before digging in. I recommend drizzling some honey on top and enjoying it with some crackers or fresh fruit!

There ya go! The perfect little snack while you’re cooped up inside the house. If you’d like, pop a bottle of a dry sparkling wine to go with it! The crisp bubbles will complement the bloomy, mellow brie beautifully.

I think it’s also worth it to mention that my mother, who absolutely hates brie, ate two of these babies, so try this recipe out on your most stubborn brie belittler!
