
This weekend my boyfriend decided to bake a ricotta cake, and kindly documented the process for my blog! He delivered a piece of it to me last night and I can’t get over how light and fluffy it was! This cake is perfect for Easter Sunday and I can’t wait to share it with you all. Let’s get to the recipe…
Ingredients:
1 package of yellow Duncan Hines cake mix
2 lb.ricotta cheese
4 eggs
1 cup of sugar
1 tsp.vanilla extract
½ tsp.nutmeg
Confectioners sugar to sprinkle on top
Instructions:
- Preheat your oven to 350 degrees, and prepare a greased and floured cake pan. Using the directions on the Duncan Hines cake box, prepare the cake batter as instructed.
- In a different bowl, combine the ricotta cheese, eggs, vanilla extract and sugar, mixing thoroughly.
- Pour the Duncan Hines cake batter into your pan, and spoon in the ricotta mixture overtop the batter.
- Bake the cake for 55-60 minutes and when cooled, sprinkle confectioners sugar on top.
- Serve and enjoy!
Like I previously said, this cake is perfect for Easter. If you are running out of ideas for dessert, this cake is the perfect solution! If I were to bake this cake, I would serve it strawberry shortcake style, with berries and whipped cream. This cake is so simple, you can serve it whatever way you like, or just the way it is.
