stewed lentils and rice with carmaleized onions

Ingredients
  

  • 1/2 bag lentils
  • 1/4 cup white rice
  • 1/2 large onion diced
  • 6 cups water or broth
  • salt & pepper to taste
  • lemon juice
  • (optional) cinnamon to taste

Instructions
 

  • Saute onion in olive oil over medium heat. Make sure to give them a nice color but be careful not to burn them
  • Add lentils and 6 cups of liquid
  • Bring to a boil and simmer until lentils are muddy (about 20-30 minutes)
  • Add ΒΌ cup or less of rice (add more water if needed)
  • Cover for 10 minutes (or until rice is tender)
  • optional: top with caramelized onions (cook onions in oil over medium heat until browned)

Notes

May be thick or soupy
