stewed lentils and rice with carmaleized onions
Prep Time 10 minutes mins
Cook Time 1 hour hr
- 1/2 bag lentils
- 1/4 cup white rice
- 1/2 large onion diced
- 6 cups water or broth
- salt & pepper to taste
- lemon juice
- (optional) cinnamon to taste
Saute onion in olive oil over medium heat. Make sure to give them a nice color but be careful not to burn them
Add lentils and 6 cups of liquid
Bring to a boil and simmer until lentils are muddy (about 20-30 minutes)
Add ΒΌ cup or less of rice (add more water if needed)
Cover for 10 minutes (or until rice is tender)
optional: top with caramelized onions (cook onions in oil over medium heat until browned)
