
This morning I woke up thinking about content for my blog and was stumped. I decided to scroll through Pinterest in bed for a while, when I stumbled upon “THE BEST TIRAMISU YOU WILL EVER MAKE”, on my feed. Of course I was intrigued because who doesn’t love tiramisu, so I ran to Wegmans and got all of my ingredients (wearing a mask and gloves in the store of course!!!) and got baking.
*This recipe calls for alcohol. If you do not want to include liqueur you can certainly opt out of it and just add more coffee instead.*
Ingredients:
- 1 cup of sugar
- 6 egg yolks
- 1 ¼ cup mascarpone cheese (room temp)
- 1 ¾ cup heavy whipping cream
- 1-2 packages of Italian style lady fingers
- 1 cup of coffee or espresso
- ½ cup Kahlua (or any coffee flavored liqueur)
- Unsweetened cocoa powder to sift on top
Instructions:
- Over a double boiler, combine and constantly mix the egg yolks and sugar, stirring for 10 minutes. Remove from the heat and continue stirring until it’s thick. Let this mixture cool before adding the mascarpone.
- Once cooled, add the mascarpone to the egg yolk and sugar mixture until it is evenly mixed.
- Using an electric mixer, or hand mixer, mix the heavy whipping cream into another bowl until stiff peaks form.
- Fold the whipped cream into the mascarpone mixture gently, and set aside for later.
- Now make your coffee and liqueur mixture, combining 1 cup of coffee(or espresso) into a separate bowl, and ½ a cup of Kahlua. Dip the lady fingers into this mixture just so that they are covered, NOT SOAKED. (If they are in the mixture too long, they will become too soggy.)
- In a baking dish, line the bottom with the dipped lady fingers until the surface is covered. Grab your cream and cover the lady fingers generously. Repeat this process until the baking dish is filled to the top.
- Refrigerate for 4 hours or more, once it is fully set, dust the top with cocoa powder.
- Serve and enjoy!
I loved making this recipe because it was spontaneous and relieved some of my boredom. I added some raspberries on top as a garnish, however you could use flowers, chocolate, other berries or anything your heart desires. Oh yeah, this WAS the best tiramisu recipe I ever made!!
