
Who doesn’t love a good meatball? This past weekend I helped Ma cook her famous meatballs in sauce and she taught me all of the secrets that go into perfecting the recipe.
Ingredients:
- 5 lbs. ground Beef (Yes,this is an unrealistic amount of meat, however this is the amount we use because we are feeding an army. You can adjust this if need be!)
- 2 cups unseasoned breadcrumbs
- 1 ½ cups grated pecorino romano cheese
- ½ cup finely chopped parsley
- ½ cup garlic salt (heaping)
- 1 heaping tbsp. black pepper
- 10 eggs
- 2 tbsp. olive oil (this is for coating your pan when you begin to fry the meatballs)
Instructions:
- In a large bowl, combine your ground beef, chopped parsley, breadcrumbs, cheese, garlic salt, and black pepper together. Start mixing. (We use our hands to mix but feel free to use a wooden spoon)
- After the mixture has been combined, slowly crack the eggs into the bowl and mix gradually.
- Ready a frying pan and coat the bottom with olive oil, put the heat on low to start.
- Once the oil is hot, roll your meatballs to about the size of a golf ball and start frying! (Raise the heat to medium-low)
- If you are making sauce, you are going to want to have the sauce ready ahead of time. Cook the meatballs half way through, then throw them into your sauce to finish cooking. If you have no sauce, just cook them until they are completely browned with a crispy outer layer.
- Once all the meatballs are cooked, serve them with spaghetti or the pasta of your choice and eat!
This recipe seems a lot harder than it is, but once you start the process it’s easy! You will undoubtedly impress your guests with these meatballs. If you don’t want to fry them, you can always throw them into the oven as an alternative at 350 degrees for about 15-20 minutes.
I really enjoy them without tomato sauce right out of the pan because you can really taste each of the ingredients embedded into the meat. You can even turn these meatballs into hamburgers, Ma does this all the time and calls them fancy burgers… I hope you try this recipe for yourself!
