Ingredients:
- 1 pound flank steak or skirt steak
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Juice of 1 lime
- 1/4 cup chopped cilantro
- 1/2 red onion, thinly sliced
- 1 avocado, sliced
- 8 small corn or flour tortillas
- Optional toppings: shredded lettuce, diced tomatoes, salsa, sour cream, hot sauce
Instructions:
- In a bowl, mix the olive oil, minced garlic, chili powder, cumin, paprika, salt, pepper, and lime juice to create a marinade.
- Place the steak in a shallow dish or resealable plastic bag and pour the marinade over it. Make sure the steak is evenly coated. Allow it to marinate for at least 30 minutes, or up to overnight in the refrigerator.
- Heat a grill or skillet over medium-high heat. Once hot, add the marinated steak and cook for about 4-5 minutes per side for medium-rare, or longer if desired. Cooking time will depend on the thickness of your steak and your preferred level of doneness.
- Remove the steak from the grill or skillet and let it rest for a few minutes before slicing it thinly against the grain.
- Warm the tortillas in a separate skillet or microwave according to package instructions.
- Assemble your tacos by placing some sliced steak on each tortilla, then topping with sliced avocado, red onion, cilantro, and any other desired toppings.
