Shrimp Bowl

Dive into a symphony of flavors, where shrimp’s sweetness meets spice’s savor.

Ingredients:

  • 1 cup of rice (white or brown)
  • 1/2 lb shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 clove garlic or minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 onion powder for taste
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels (fresh, canned, or frozen)
  • 1/2 avocado, sliced
  • 1/4 cup salsa
  • 2 tablespoons chopped fresh cilantro
  • Lime wedges for serving

Instructions:

  1. Cook the rice according to package instructions.
  2. While the rice is cooking, heat olive oil in a skillet over medium heat. Add minced garlic and cook for about 30 seconds until fragrant.
  3. Add the shrimp to the skillet and sprinkle with chili powder, cumin, salt, and pepper. Cook the shrimp for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add the black beans and corn kernels. Cook for 3-4 minutes until heated through.
  5. Once the rice is cooked, divide it into bowls. Top with cooked shrimp, black beans, corn, sliced avocado, salsa, and chopped cilantro.
  6. Serve with lime wedges on the side for squeezing over the bowl before eating.
