Chicken Bowl

Wrap your taste buds in a hug with this chicken bowl – a flavor-packed adventure in every bite!

Ingredients:

  • 1 cup cooked rice (white or brown)
  • 1 boneless, skinless chicken breast, cooked and diced
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn (fresh, canned, or frozen)
  • 1/4 cup diced bell peppers (any color)
  • 1/4 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup shredded cheese (cheddar, Monterey Jack, or your favorite)
  • 1/4 cup salsa
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional toppings: avocado slices, sour cream, chopped cilantro, lime wedges

Materials:

  • Medium-sized skillet
  • Saucepan (for cooking rice)
  • Mixing spoon

Instructions:

  1. Cook rice according to package instructions (if not already cooked).
  2. Heat olive oil in the skillet over medium heat.
  3. Add diced chicken breast to the skillet and season with salt and pepper. Cook until golden brown and cooked through, about 5-6 minutes.
  4. In the meantime, heat black beans and corn in a saucepan over medium heat until warmed through.
  5. Once the chicken is cooked, remove it from the skillet and set it aside.
  6. In the same skillet, add diced bell peppers and red onion. Cook until slightly softened, about 2-3 minutes.
  7. To assemble the bowls, divide cooked rice among serving bowls.
  8. Top each bowl with cooked chicken, black beans, corn, bell peppers, red onion, diced tomatoes, and shredded cheese.
  9. Drizzle salsa over the top of each bowl.
  10. Garnish with optional toppings such as avocado slices, sour cream, chopped cilantro, and lime wedges.
  11. Serve immediately and enjoy your delicious and nutritious chicken bowls!
