The Ramen Renaissance: Lemon Garlic Shrimp

Ingredients:

  • 1 package of instant ramen noodles (any flavor)
  • 8-10 medium-sized shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • Zest and juice of 1 lemon
  • 2 cups vegetable or chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon butter or olive oil
  • Salt and pepper, to taste
  • Optional garnish: chopped fresh parsley or cilantro, sliced green onions

Instructions:

  1. Prepare Ramen Noodles:
    • Cook the instant ramen noodles according to package instructions. Drain and set aside.
  2. Cook Shrimp:
    • Heat butter or olive oil in a skillet over medium heat.
    • Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
    • Add the shrimp to the skillet and cook for 2-3 minutes on each side until pink and cooked through.
    • Season the shrimp with garlic salt, pepper, and lemon zest while cooking.
  3. Make Lemon Broth:
    • In a separate pot, bring vegetable or chicken broth to a simmer.
    • Stir in soy sauce and lemon juice to the broth. Adjust the seasoning to taste.
  4. Combine Ingredients:
    • Divide the cooked ramen noodles into serving bowls.
    • Pour the lemon broth over the noodles.
  5. Add Shrimp and Garnish:
    • Arrange the cooked shrimp on top of the noodles in each bowl.
    • Garnish with chopped fresh parsley or cilantro, sliced green onions, and additional lemon zest if desired.
